I've been vegan for 3 years now and eggs were one of the last things I gave up. It was hard because I grew up making omelets with my Dad every weekend. Eggs weren't just something I was used to eating, they held an emotional memory tie for me too.
Using chickpea flour was the most popular way on the internet when I searched for a vegan alternative for eggs at the time.
Over the years, I have developed this recipe that works with making Chickpea Omelets and Scrambles. It doesn't exactly replicate the texture of eggs, but the taste is pretty similar and no eggs were stolen in the process.
This mix is made with: Chickpea flour, sea salt, onion powder, dried basil, dried oregano, ginger powder and black salt.
Now you don't have to get all of the individual ingredients. You have this already made mix that you can just dump and cook. Sounds like a win win to me.
